Fettucine Alfredo with Vegetables
Ingredients
- 1 pound of fettuccine (pasta)
- 1/2 cup of broccoli
- 1/2 cup asparagus
- 1/2 cup mushrooms (sliced)
- 2 cups of spinach
- 4 roma tomatoes (sliced)
- 12 slices of processed Swiss cheese
- 3 tablespoons of feta cheese (crumbled)
- 1 stick of butter
- 3 gloves of garlic
- 1 teaspoon of salt
Directions
The first thing you want to do is cook the fettuccine. To do this:
- Add six cups of water to a big pot with a teaspoon of salt and let it boil until the water starts to bubble.
- Then add a pound of fettuccine and cook uncovered for 10-12 minutes. When you buy the fettuccine the box tells you how much you’re getting.
Now you want to chop up your vegetables. You’ll need 1/2 cup of broccoli, 1/2 cup of asparagus, 1/2 cup of sliced mushrooms, 4 sliced roma tomatoes, and 2 cups of spinach.
Next you want to make the alfredo sauce.
- Add a cup of water to a large skillet and let it boil.
- Next make the cheese sauce by adding 12 slices of cheese, 3 cloves of garlic chopped up, and 1 stick of butter. Stir.
- Now you want to add some of the vegetables. Add the broccoli, asparagus, and sliced mushrooms.
- Let it simmer (which means put the heat down really low) for 5 minutes.
Now drain the fettuccine. Be very careful because the steam can be really hot!
Add the fettuccine to the sauce and mix it up.
Now add the two remaining vegetables: the tomatoes and spinach (they don’t need to precook in the sauce).
Toss the noodles and the vegetables in the sauce and it’s now ready to serve.
When you serve it, add the feta cheese to the top.
