Cornbread

You will need:

  • 2 c. all-purpose flour
  • 2 c. cornmeal
  • 4-8 Tbl. sugar
  • 2 Tbl. baking powder
  • 1 tsp. salt
  • 4 beaten eggs
  • 2 c. milk
  • 1/2 c. cooking oil or shortening, melted

Grease a 13” × 9” baking pan; set aside.

In a medium mixing bowl stir together the flour, cornmeal, sugar, baking powder, and salt. Make a well in the center of the dry mixture; set aside.

In another bowl combine the eggs, milk, and cooking oil or melted shortening. Add egg mixture all at once to dry mixture. Stir just till moistened.

Spoon batter into the prepared pan. Bake in a 425° oven for 20-25 minutes or till a wooden toothpick inserted near the center come out clean. Cool on a wire rack. Enjoy!
